Ground Beef Casserole With French Fried Onions

Hello Foodies! Thank you for stopping by. I can't believe we are already almost halfway through the year. We are enjoying this beautiful Colorado summer weather. It's been unusually warm, but we've been getting our typical afternoon thunderstorms, which help cool down the temperature and also keep us from getting wildfires. After the Waldo Canyon fire four years ago, followed by the Black Forest fire a year later, we welcome the moisture, no matter how inconvenient it can be!
Today I've got a wonderful family recipe for you. This is one of my grandmother's recipes. After my parents got divorced when I was 3, I would spend every other weekend with my dad and on the Friday night that I stayed with him, we would go to grandma and grandpa's house for a family dinner. My uncles and aunts would be there and grandma would always make a spectacular dinner for us. She would put the leaf in the dining room table and use her linens and we would all gather around and laugh and share. I soooooo enjoyed those family dinners! She would usually make an Italian dish like spaghetti w/ meatballs or veal parmesan or chicken cacciatore but sometimes she would make this fantastic Ground Beef Casserole. I have made some modifications to make it my own, but it's a family favorite and always brings me back to those wonderful family dinners. I wish families would make time for each other like mine did when I was little. No matter what was going on, everyone would make it for that Friday night dinner. It was one constant in a life filled with uncertainty at my young age. I always knew that my uncles and aunts would be there and my dad and uncle Ken would tease me and chase me around the house. I felt so safe and loved!
When Grandma made this Ground Beef Casserole, she made it with a lot of sour cream and baked it with biscuits on the top. I cut way back on the sour cream because it was just too much and I like to bake the biscuits on the side so that they are not soggy on the bottom. I love making casseroles, because they are easy to throw together and you have all of your veggies and meat and carbs in one dish and leftovers (if there are any) are delicious!
Onto the recipe for Grandma's Ground Beef Casserole!
Begin by slicing some white button mushrooms and green onions. I like to chop my mushrooms in fairly big chunks because my girls don't like mushrooms and if they are cut into large slices, it's easy for them to pick them out. I happen to love mushrooms, so I'm not sure what is wrong with them, but I love them in spite of their faults ;).
Next, brown a pound of lean ground beef in a saute pan and once the meat is almost completely cooked, add in the mushrooms and onions and some seasoned salt and cook until the mushrooms are softened. The beef will continue to cook in the oven, so it's ok to leave a little pink on it.
Transfer the meat mixture along with all of the remaining ingredients (minus the French fried onions) to a baking dish and mix until combined.
I know it's not much to look at, but it's full of amazing flavor. It's one of my family's favorite dishes and it's so easy to prepare! The only complaint I get is that I should have made more.
Bake it in the oven for 15 minutes covered, then remove the lid and add the French fried onions and bake for an additional 10 minutes. Serve with biscuits. I like the big, flaky biscuits that come in the can that is scary to open. Is it just me, or do those cans scare the crap out of you when they pop open also? I have to ask Jay to open them. I'd rather pop a balloon than open a can of biscuits.

Ground Beef Casserole w/ French Fried Onions
Ingredients
- 1 pound lean ground beef (I like 90/10)
- 2 tablespoons Worcestershire sauce
- 1 tsp seasoned salt
- 3 green onions, thinly sliced (both whites and greens)
- 1 package white button mushrooms, sliced
- 1 can cream of mushroom soup
- 1/4 cup sour cream
- 1 small can French fried onions
Instructions
- Preheat oven to 400 degrees
- In a saute pan, brown the ground beef. Add in the green onions, mushrooms and seasoned salt and cook until the mushrooms are softened.
- Transfer to a baking dish and add in the remaining ingredients (minus the French fried onions) and stir until combined.
- Bake covered for 15 minutes.
- Remove the lid and top the casserole with the French fried onions and cook for another 10 minutes.
- Serve with biscuits.
